""Good things come to those who wait" could be the motto of Dalmore Constellation Collection and Richard Paterson has probably simply surpassed himself with these whiskeys. The whiskey was distilled in 1989 and the first 17 years of this Dalmore was allowed to store in freshly emptied bourbon barrels and "spread out" in peace. In 2007, Matusalem Oloroso Sherry casks were filled for another 5 year aging period.
After a total storage time of 22 years, only 327 bottles were filled and included in the Constellation Collection. Of these 327 bottles, we would like to offer you No. 55 here.
Color: Amber gold with shimmering accents.
Nose: Marzipan, spicy cinnamon and buttered asparagus tips linger, while freshly sliced rye bread, lime, jam and vanilla beans complete the whole.
Palate: Ripe pineapple, melons, peach syrup and figs. Hints of freshly ground coffee, balsamic vinaigrette, orange peel and black syrup create a pleasant character.
